ORIGIN:
Africa, south-central part of the country, bordering Kenya. Region of Southern Nations, Nationalities and Peoples. Gedeo Administrative Department. It is said that coffee was discovered by monks right here in the town of Kaffa. Coffee also grows wild in this area.

ALTITUDE:
1,800-2,000 m. asl.

CRIVEL:
Undetermined. No importance is given to the size of the grain so much so that it appears small. It is graded to indicate the amount of defects on 300 g. Gr. 1 = 0-3 defects.

TIME OF COLLECTION:
October – January

PREPARATION:
By wet route with fermentation. A “washed” coffee is obtained. It is then exposed to the sun for drying.

DESCRIPTION:
Fine-textured hazelnut-colored cream with dark brown dots. Intense and strong aroma. Medium-high acidity not at all troublesome. It presents floral notes. Definitely satisfying are the tactile sensations and the aftertaste of spices, licorice and herbs. The whole closes with a wild hint.
